Simple & Delicious Buttermilk Scones

Don't fancy yourself a baker? Then this recipe is for you. Buttermilk scones might sound fancy, but this version is as simple as they come. We try to bake an item with our four-year-old son Keegan at least once a week, and this was one of the first recipes he helped us measure out and cut. This recipe is for a basic scone, but once you perfect it you can add dried fruit, chocolate, or spices to create your own version.

Ingredients

3 cups all-purpose organic flour

1/3 cup organic sugar

2 1/2 tsp. baking powder

1/2 tsp. baking soda

1 tsp. salt

3/4 cup organic grass fed butter

1 cup organic grass fed buttermilk

Organic cream for brushing on top

Directions

  1. Preheat oven to 400 degrees. Combine the flour, sugar, salt, baking powder and baking soda in a large bowl. Add butter and mix with your fingertips to a coarse meal.
  2. Add buttermilk and mix with a fork just until combined. Try to not overwork the mix as this will make it hard and flat during cooking.
  3. Gather the mix together in the bowl and turn out to a floured board. Shape the mix evenly with your hands and pat to top to level it (the dough should be rectangle shaped and 1” thick)
  4. Cut into wedges and place slightly separated on a greased baking sheet. Brush the tops with the cream, and bake for 15 minutes, or until lightly browned. Serve warm.
